Watermelon Gazpacho
Ingredients
- 4 heaping cups, (600 g) watermelon (without rind)
- 1 medium cucumber, , chopped
- 3 vine tomatoes, (about 1 lb/455 g)
- ¼ cup (30 g) chopped red onion
- 1 red bell pepper, , chopped
- 1 clove garlic
- 3 tablespoons (45 mL) lime juice
- ¼ cup (60 mL) olive oil
- 1 teaspoon (6 g) kosher or fine sea salt
- 1 teaspoon (5 mL) agave
- ⅓ cup (10 g) fresh basil leaves
Instructions
- Add all the ingredients into a blender and blend until smooth. Chill for at least 2 hours. Serve in bowls.
