These 5-Ingredient Mexican Mini Quiches are so simple and convenient. Make them ahead and have a grab-and-go breakfast ready for busy mornings.

5-Ingredient Mexican Mini Quiches
Ingredients
- Oil or gluten-free nonstick cooking spray, , for greasing the pan
- 1½ cups grated cheddar cheese , (or dairy-free alternative)
- ¾ cup milk or dairy-free milk
- ½ cup gluten-free Bisquick , (or another gluten-free biscuit mix)
- 2 large eggs, , lightly beaten
- ¾ cup chunky salsa
Instructions
- Preheat the oven to 375°F. Grease a standard 12-cup muffin pan.
- Combine cheese, milk, Bisquick, eggs, and salsa in a medium mixing bowl and stir until fully combined. Distribute the batter evenly among the prepared muffin tins.
- Bake for 30 minutes or until the quiches are browned and set.
