Ingredients 

  • Oil or gluten-free nonstick cooking spray, , for greasing the pan
  • cups grated cheddar cheese , (or dairy-free alternative)
  • ¾ cup milk or dairy-free milk
  • ½ cup gluten-free Bisquick , (or another gluten-free biscuit mix)
  • 2 large eggs, , lightly beaten
  • ¾ cup chunky salsa

Instructions 

  • Preheat the oven to 375°F. Grease a standard 12-cup muffin pan.
  • Combine cheese, milk, Bisquick, eggs, and salsa in a medium mixing bowl and stir until fully combined. Distribute the batter evenly among the prepared muffin tins.
  • Bake for 30 minutes or until the quiches are browned and set.
