Gluten Free Oatmeal Cookie Granola Recipe

When it comes to celebrating Mother’s Day, there’s nothing better than kicking off the day by serving mom breakfast in bed or a glorious brunch filled with all sorts of morning goodies. It’s a day to make mom feel special, to show her how much we care, and to take the things she normally does for us (like cook breakfast) off her plate so she can truly relax.
Granola is a tried-and-true breakfast staple that everyone is sure to love. And since we’re celebrating mom for Mother’s Day, what better way to jazz up her morning than by serving her granola that has chocolate chips inside!?

Gluten Free Oatmeal Cookie Granola Recipe
Ingredients
- 5 cups gluten-free rolled oats
- ½ cup coconut sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon kosher or fine sea salt
- ⅓ cup maple syrup
- ¼ cup creamy almond butter
- ¼ cup coconut oil
- 1 teaspoon pure vanilla extract
- ½ cup mini chocolate chips
Instructions
- Preheat the oven to 325ºF.
- In a large bowl, stir together the oats, sugar, cinnamon, and salt.
- Melt the syrup, almond butter, coconut oil, and vanilla together and pour over the dry ingredients. Stir until evenly coated.
- Transfer the mixture to a baking sheet and bake for 35-45 minutes, stirring every 10-15 minutes so the granola doesn't burn.
- When golden brown, remove from the oven and let cool completely. Stir in the chocolate chips and store in an airtight container for 2-3 weeks.
