Gluten Free Baked Zucchini Fries Recipe
Ingredients
- Gluten-free nonstick cooking spray
- 1 cup gluten-free all-purpose flour
- Kosher or fine sea salt
- Freshly ground black pepper
- 1 teaspoon garlic powder
- 2 large eggs
- 1 cup gluten-free panko bread crumbs
- ¼ cup Parmesan cheese or dairy-free substitute
- 1 teaspoon smoked paprika
- 4 zucchini, each about 8 inches long
- Ketchup, for serving
- Chive Ranch Dressing, for serving
Instructions
- Preheat the oven to 425°F. Spray two baking sheets with cooking spray.
- Place the flour in a pie pan or plate, and add 1 teaspoon salt and ½ teaspoon pepper along with the garlic powder.
- Put the eggs, ½ teaspoon salt, and ¼ teaspoon pepper in another pie pan or plate and whisk with a fork.
- Place the bread crumbs, cheese, and smoked paprika in another pie pan or plate and mix.
- Trim the ends off the zucchini and cut into pieces about ½ inch thick by 4 inches long. Dip the zucchini first into the flour, then into the egg, then into the bread crumb mixture, making sure the breadcrumb mixture adheres to the zucchini. Place on the prepared baking sheets. Spray the zucchini with cooking spray and bake for 10 minutes. Flip the zucchini, then bake for another 10-12 minutes or until golden brown. Sprinkle with a pinch of salt as soon as they come out of the oven. Serve with ketchup or Chive Ranch Dressing.
