How to Butterfly a Pork Chop

1. Set your pork chop flat on a cutting board.

2. Place your hand gently over the chop. Hold your knife parallel to the cutting board.

3. Cut horizontally through the meat slowly moving the knife back and forth. Do not cut all the way through the meat; stop when you are a bit more than two-thirds through.

4. Gently pull the meat open like a book.
