Hearty Breakfast Casserole

Ingredients 

  • 6 bacon slices, diced
  • 1 cup diced green peppers
  • 1 cup diced yellow onion
  • 3 cups peeled and diced sweet potatoes
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound breakfast sausage
  • 1 9-ounce package fresh spinach
  • 12 large eggs

Instructions 

  • Preheat the oven to 350ºF.
  • In a saucepan over medium heat, cook the bacon until it renders a good amount of fat. Add the peppers, onion, sweet potatoes, salt, garlic powder, and onion powder. Cook for 5 minutes, stirring continuously. Add the breakfast sausage. Crumble it up as it cooks for 2-3 minutes. Add the spinach and stir until wilted. (Covering the saucepan will speed this up.)
  • Transfer the mixture to a 9×13-inch casserole dish, spreading it evenly and pressing down. Crack the eggs on top. Bake until the egg whites are set and yolks are done to your liking, 5-10 minutes for slightly runny yolks or longer for firmer yolks.
