Sweet cantaloupe, salty prosciutto, and tangy goat cheese come together beautifully in these Cantaloupe, Prosciutto & Goat Cheese Truffle Skewers. These are simple appetizers for a sophisticated palate!
Tips for picking the best cantaloupe:
• Choose melons that feel heavy for their size. This indicates juiciness and a higher concentration of flavor.
• With cantaloupe, push your fingers on the section where the vine was attached. It should be slightly soft (not mushy or hard) and smell slightly sweet and fresh.
Cantaloupe, Prosciutto & Goat Cheese Truffle Skewers
Ingredients
For the goat cheese truffles:
- 10 ounces (284 g) goat cheese
- 6 ounces (170 g) cream cheese
- 2 tablespoons (30 mL) honey
- 1 teaspoon (2.6 g) ground cinnamon
- 1½ cups (165 g) chopped pecans, divided
- ¾ cup (113 g) chopped dried cranberries
- ½ cup (30 g) finely chopped fresh parsley
For the skewers:
- 18 (6-inch) skewers
- 18 cantaloupe melon balls, (scooped from 1 ripe cantaloupe)
- 18 thin slices prosciutto
Instructions
Make the goat cheese truffles:
- Combine the goat cheese, cream cheese, honey, and cinnamon in a large bowl. Beat with an electric mixer until light and fluffy. Fold in ½ cup chopped pecans.
- In a shallow bowl, combine the remaining pecans, dried cranberries, and parsley.
- Divide the cheese mixture into thirds. Form 6 balls from each third. Roll the balls in the pecan mixture to coat completely. Refrigerate for 1 hour.
Assemble the skewers in the following order:
- First add 1 slice of prosciutto (gathered into a ruffle/stack) to a skewer, followed by 1 melon ball and 1 goat cheese truffle. Repeat using all the skewers. Serve immediately.
