If you’re looking for a quick and simple appetizer or snack, this delicious Plant-Based Apple “Cheese” Flatbread recipe will hit the spot! It’s great for entertaining guests or when you want something a little bit different as a mid-day snack. The combination of apples, plant-based cheese, and arugula gives it a nice balance of cheesy, sweet, and peppery flavors. Plus, did I already mention it’s quick?!

For this dish, I used one small green apple and a small red apple because I like the combination of tart and sweet flavors you get from using both. I like to use organic apples. For the “cheese” I used plant-based potato queso from Loca. You can opt for their mild or spicy option, whichever you prefer.

This recipe is great for those who are not only gluten-free but dairy-free or vegan.

Plant-Based Apple “Cheese” Flatbread

Ingredients 

  • 1 (9-10 inch) gluten-free pizza crust
  • ⅓ - ½ jar Loca Plant Based Potato Queso, , mild or spicy
  • 1 small green apple, , cored and sliced
  • 1 small red apple, , cored and sliced
  • 1 tablespoon dairy-free butter, , melted
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon pure maple syrup
  • Kosher or fine sea salt
  • Freshly ground black pepper
  • 2 cups baby arugula

Instructions 

  • Preheat the oven according to the pizza crust package directions. Line a baking sheet with parchment paper.
  • Spread the Loca queso over the top of the pizza crust. Layer the apple slices in concentric circles on top of the queso. Brush with the melted dairy-free butter. Bake according to the package directions or until the crust is browned, the queso bubbly, and the apple slices are starting to brown.
  • While the flatbread is baking, combine the olive oil, lemon juice, maple syrup, and a pinch of salt and pepper in a mixing bowl and whisk to combine. Add the arugula and toss to combine.
  • Top the hot flatbread with the arugula. Slice and serve.
