Mochi Avocado Southwestern Waffles

Have you ever had a Japanese mochi waffle? They look like a “regular” waffle but that’s where the similarity ends. They have a crunchy, golden brown exterior and a soft, chewy, slightly sticky interior. Mochi waffles are a favorite in Japan.

Typically, they are made with rice flour, eggs, sugar, and milk – typical waffle ingredients with the exception of using glutenous (or sweet) rice flour instead of wheat flour.

Thanks to Eden Foods, you can make a one-ingredient mochi waffle at home. You heard me right, ONE INGREDIENT!

Eden’s Sweet Brown Rice Organic Mochi are little squares of shelf-stable sweet brown rice mochi with nothing else added. They can be steamed, fried, baked, and can be used to make waffles!

To make a waffle just cut or grate the squares of mochi and cook in a waffle maker. Easy enough.

I decided to put a Southwestern twist on this Japanese classic by adding avocado and a quick black bean salsa. Sort of waffle meets avocado toast meets tostada.

Mochi Avocado Southwestern Waffles

Ingredients 

  • 6 Eden Sweet Brown Rice Organic Mochi Squares
  • 2 avocados, , divided
  • 2 limes, , divided
  • Kosher or fine sea salt
  • 1 cup canned black beans, , rinsed and drained
  • 2 to matoes, , diced
  • ¼ white onion, , diced
  • 1 jalapeno, , seeded and minced
  • ¼ cup cilantro

Instructions 

  • Put the mochi squares in a food processor and process until finely chopped. Add one avocado, the juice of one lime, and ½ teaspoon salt. Process until combined.
  • Heat a mini waffle maker, spread some of the mochi mixture evenly in the waffle maker, and cook for 5 – 6 minutes. Repeat with the remaining mixture.
  • Thinly slice the remaining avocado.
  • Combine beans, tomato, onion, jalapeno, cilantro, juice of one lime and salt to taste.
  • Place avocado slices on each waffle and top with the black bean salsa.
