Tropical Power Bars

Ingredients 

  • ½ cup pitted dates
  • ½ cup dried mango
  • 2 tablespoons honey
  • 1 large egg, lightly beaten
  • 3 tablespoons sunflower seed butter, or any nut/seed butter
  • ½ cup macadamia nuts, chopped
  • ½ cup walnuts, chopped
  • ½ cup almonds, chopped
  • ¼ cup unsweetened coconut flakes
  • 1 tablespoon sunflower seeds
  • ¼ cup mini dark chocolate chips

Instructions 

  • Preheat the oven to 225ºF. Line a 9×9-inch baking dish with parchment paper.
  • Place the dates and dried mango in a food processor and pulse until “gooey.” Transfer to a large mixing bowl. Add the remaining ingredients in the order listed and mix thoroughly. Transfer the mixture to the lined baking dish and press down thoroughly and evenly. Using a pizza cutter, cut the unbaked mixture into 12 bars. Bake for 45-60 minutes until the middle is firm. Let cool completely, then cut into 12 bars on the pre-cut lines. Wrap each bar individually in plastic wrap.
