Ingredients
- 2 pounds baby Yukon Gold potatoes ¾-inch diameter, washed and unpeeled
- 1 large white onion cut in half widthwise and each half cut into 6 wedges
- 4 tablespoons unsalted butter cut into small pieces
- 3 garlic cloves chopped
- 1 teaspoon garlic powder
- 2 teaspoons kosher or fine sea salt
- 1 teaspoon freshly ground black pepper
Instructions
- Heat a grill to medium, about 350-400ºF.
- lace the potatoes into a cast-iron skillet in a single layer. Add the rest of the ingredients, stir well, and cover the skillet snugly with foil. Put the pan over indirect heat and cover the grill. - To keep warm until serving, cover the pan with foil. The residual heat from the pan will keep the potatoes warm.
