You won’t believe how rich and decadent this pudding tastes without dairy or sugar! Blended together, sweet potato and carob (or cacao) are truly a match made in culinary heaven.

Chocolate or Carob Pudding

Ingredients 

  • ½ cup baked sweet potato puree, about ½ sweet potato
  • ½ cup canned coconut milk
  • 3 tablespoons carob powder or raw cacao powder
  • ¼-½ teaspoon pure liquid stevia, orange or vanilla works well
  • Kosher or fine sea salt, to taste
  • ¼ cup unsweetened almond milk
  • 1 teaspoon ground cinnamon

Instructions 

  • Blend all the ingredients in a blender until smooth. For thicker pudding, refrigerate for 4 hours or overnight. Will keep, covered in the refrigerator, for up to 3 days.
