Almond Spinach Pesto
Ingredients
- 4 cups baby spinach
- ¼ cup slivered almonds
- 4 tablespoons extra-virgin olive oil
- 1 large garlic clove
- Sea salt and freshly ground pepper, to taste
Instructions
- In a food processor, pulse all ingredients until a pesto-like consistency is achieved – smooth but a little chunky if desired. Serve with gluten-free toast, crackers, or sliced vegetables.
