Amaretto Cherry Chocolate Chunk Cupcakes

Almond and cherry almost always work together. Then you throw some dark chocolate into the mix and you have a party!

Amaretto Cherry Chocolate Chunk Cupcakes
Ingredients
- 3¼ cups blanched almond flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 large eggs, room temperature
- ¾ cup honey
- 2 teaspoons almond extract
- 1 teaspoon vanilla extract
- ¾ cup coconut oil, melted
- 1 cup dried cherries, chopped into small pieces
- ½ cup roughly chopped dark chocolate, 70% or higher
- Optional, for topping: melted dark chocolate (70% or higher)
Instructions
- Preheat the oven to 325ºF. Line 12 cups of a standard muffin pan with paper liners.
- In a bowl, combine the almond flour, baking soda, and baking powder. In a large mixing bowl, beat together the eggs, honey, almond extract, and vanilla extract using an electric mixer. Slowly drizzle in the coconut oil while beating on low. Add the almond flour mixture and beat to combine. Stir in the dried cherries and chocolate by hand.
- Divide the batter among the lined muffin cups. Bake for 15-20 minutes, until brown around the edges and a toothpick inserted comes out clean. Cool the cupcakes completely.
- If desired, melt additional dark chocolate and drizzle over the top of the cooled cupcakes before serving.

So I tried this recipe and it was a flop for me. It took more like 40 minutes for the middle to bake. And then it was very crumbly. I’m new at this GF stuff so maybe I did something wrong. Tastes good, but it didn’t look very nice.

Sorry to hear that! Did you check the center with a toothpick after 20 minutes and it wasn’t clean? Or did it just look like it wasn’t done at that time? This was a recipe from one of our magazine writers, so I can’t say for certain what the issue might have been (we made them here at the office to photograph for the magazine, but it’s been a few years). If you can give me more details, maybe I can help you troubleshoot it or I can contact the writer and see what she says.
