Balsamic Grilled Fruit
Ingredients
- 4 large peaches, pitted and cut into quarters
- 1 large pineapple, peeled, cored, and cut into rings
- ¼ cup gluten-free whiskey, honey whiskey works great, see note
- 1 tablespoon balsamic vinegar
- 1/8 cup brown sugar, packed
- 1 teaspoon pure vanilla extract
- Pinch of kosher or fine sea salt
Instructions
- Place the fruit in a large airtight container or bag. Whisk together the remaining ingredients and pour over the fruit. Toss to coat. Marinate for at least 30 minutes.
- Heat a grill to medium. Place fruit directly on the grill and cook, with the lid off, for 1 minute on each side. Remove from the grill and serve warm.
