Gluten Free Birthday Cake Doughnuts Recipe

There is no shame in taking a little shortcut now and then when it comes to gluten-free baking. With a few tricks, you can make something completely different, as we have with our Birthday Cake Doughnuts (from a boxed cake mix.)

Gluten Free Birthday Cake Doughnuts Recipe
Ingredients
- Gluten-free nonstick cooking spray
- 1 package gluten-free cake mix, (flavor of choice)
- 1 cup water
- 1 large egg
- ¼ cup vegetable oil
- 1 teaspoon pure vanilla extract
- 1½ cups powdered sugar, measured then sifted
- 1 tablespoon unsalted butter or dairy-free butter substitute, melted
- Food coloring of choice
- 2-4 tablespoons milk or dairy-free milk
- Sprinkles
Instructions
- Preheat the oven to 350°F. Spray doughnut pans with cooking spray.
- Combine the cake mix, water, egg, oil, and vanilla in a mixing bowl and whisk well. Pour the batter into a large food storage bag and snip about ¼ inch off one corner. Squeeze the batter into the prepared pans, filling about halfway full. Bake for 12-14 minutes. Let cool in the pans for 5 minutes, then transfer to a wire rack placed over waxed paper to finish cooling.
- Place the powdered sugar in a mixing bowl, add the melted butter, and a drop or two of food coloring, if desired. Stir in enough milk to bring to the desired consistency.
- Drizzle the glaze over the cooled doughnuts and top with sprinkles.
