
Gluten Free Blueberry Fool Recipe
On paper, I am a very organized person. I make lists, draw out charts, make spreadsheets and outline events to the nth degree.
That’s with business. In my “real” life I have a more haphazard approach. I bite off way more than I can chew, run around all helter-skelter and just sort of hope it will all go right.
I blame this on my birth date. I am a Pisces – two fish swimming in opposite directions. So the two aspects of my personality war with each other and the ruthlessly organized Carol often gets blindsided by the air head Carol.
Case in point – I invited a nice couple over for dinner and then completely forgot until they showed up at my front door!
It is at times like this that it helps to have a well stocked pantry, a clean house, a good bit of luck and a few tricks up one’s sleeve. It also helps to be married to a charming spouse with a sparkling personality and a thousand stories to keep your guests entertained while you whip up dinner. While I can’t help you with the charming spouse I can pass on my favorite emergency dessert.
With three ingredients and less than three minutes you can whip up a lovely and light fool for dessert; appropriately named, especially when you are trying to fool your dinner guests into thinking you were actually expecting them.
Blueberries not your thing? Substitute any type of berry you like.
Gluten Free Blueberry Fool Recipe
Ingredients
- 2 cups fresh or frozen – (thawed) blueberries
- 6 tablespoons agave nectar – (or sugar) depending on the sweetness of your berries
- 1¼ cup heavy whipping cream
Instructions
- Save 4 berries for garnish and place the rest along with the agave (or sugar) in a blender or food processor, puree the berries until smooth.
- Whip the cream until stiff peaks form. Reserve some of the whipped cream for garnish and fold the puree into the rest until almost all the streaks are gone. Spoon into 4 serving dishes. Garnish with reserved cream and berries. Serve immediately or it can be kept for up to half an hour or so in the fridge.

I love this idea. Except I'll now have to keep cream in stock for emergencies. Or…I bet I could make this with coconut milk, which I do keep in stock! Hmmm….!
Beautiful, Carol! I'm with Alta … always have coconut milk in stock. Quick easy desserts are a godsend. I have relied on the 3-minute chocolate cake often … it can go from basic to pretty awesome with the addition of some liqueur. ;-)

It is sometime in the summer – I want to say June or July – it always seems like blueberries are super plentiful around the 4th of July!
What could I use as a dairy free alternative from the heavy cream?
