Gluten Free Five Ingredient Chocolate Chip Cookies

Have you ever had a chocolate chip cookie emergency? You know, times when you just had to have a chocolate chip cookie and you had to have it sooner rather than later?

If you have, you probably know that chocolate chip cookie emergencies are not usually times when you are particularly in the mood to pull out a bunch of ingredients, sift, stir, mix, bake, and wait for those cookies. Chocolate chip cookie emergencies require very few ingredients, very little effort, and very little time to go from craving to satisfaction.

This Gluten Free Five Ingredient Chocolate Chip Cookies recipe is just what you need in such instances. All you need are five ingredients, a bowl, a spoon, a cookie sheet, and about 15 minutes. You probably have everything you need in your pantry already! I do.

My nephew has a nasty peanut allergy so I always have Sunbutter on hand as well as chocolate chips, brown sugar, eggs and vanilla. If you are prone to chocolate chip cookie emergencies as I am, you should always have these on hand as well!

Ingredients

  • 1 cup creamy Sunbutter
  • 1 cup semisweet chocolate chips
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon baking powder

Instructions

  • Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or silicon baking mats.
  • Combine all the ingredients in a large mixing bowl and stir well. Drop tablespoonfuls of batter onto the prepared baking sheets. Flatten gently with a spatula.
  • Bake for 10-12 minutes. Let cool (or not). Devour.

      No not butter but it would work with peanut butter or any other nut butter like almond or cashew.

    the recipe says “vanilla” but the video had baking powder, I am guessing baking powder is correct, “power puffs” and “soda spreads” thanks for the chocolate chip cookie emergency solution!

      Thank you so much you are very correct! It’s 1 teaspoon baking powder. However if you can afford 6 ingredients the vanilla gives an extra nice flavor. 1 teaspoon vanilla for peanut butter or 1 tablespoon if using Sunbutter.
