Ingredients

  • ½ cup baked sweet potato puree about ½ sweet potato
  • ½ cup canned coconut milk
  • 3 tablespoons carob powder or raw cacao powder
  • ¼-½ teaspoon pure liquid stevia orange or vanilla works well
  • Kosher or fine sea salt to taste
  • ¼ cup unsweetened almond milk
  • 1 teaspoon ground cinnamon

Instructions

  • Blend all the ingredients in a blender until smooth. For thicker pudding, refrigerate for 4 hours or overnight. Will keep, covered in the refrigerator, for up to 3 days.
