Ingredients
- ½ cup baked sweet potato puree about ½ sweet potato
- ½ cup canned coconut milk
- 3 tablespoons carob powder or raw cacao powder
- ¼-½ teaspoon pure liquid stevia orange or vanilla works well
- Kosher or fine sea salt to taste
- ¼ cup unsweetened almond milk
- 1 teaspoon ground cinnamon
Instructions
- Blend all the ingredients in a blender until smooth. For thicker pudding, refrigerate for 4 hours or overnight. Will keep, covered in the refrigerator, for up to 3 days.
