Gluten Free Spicy Brown Sugar Grilled Skirt Steak
One of my very favorite cuts of beef is skirt steak. It is a long, flat piece of meat that has incredible flavor, but unfortunately can be a little tough if not prepared correctly.
One trick for making a tougher cut of meat tender is to add some sugar. Now before you completely write off the idea, realize that sugar is a natural tenderizer. By simply making a rub with brown sugar, salt, and other seasonings, you can turn a relatively inexpensive and tougher cut of meat, such as skirt steak, into a tender and delicious steak.
My favorite rub is a combination of Wholesome! organic brown sugar and kosher salt (if you must use table salt, just use half the amount called for in the recipe, or your meat will taste too salty) for tenderness, smoked paprika for a hint of smoky flavor even if you cook your steak indoor on a grill pan, garlic powder for flavor, and cayenne pepper for a touch of heat.

Gluten Free Spicy Brown Sugar Grilled Skirt Steak Recipe
Ingredients
- 4 tablespoons Wholesome! organic brown sugar
- 2 tablespoons kosher salt
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 2 teaspoons cayenne pepper
- 2 ½ pounds skirt steak
- Vegetable oil
Instructions
- In a small mixing bowl, combine the brown sugar, salt, paprika, garlic powder, and cayenne pepper. Press the mixture generously on both sides of the skirt steak. Let sit at room temperature while preparing the grill.
- Prepare the grill for direct heat. Brush the grill grates with oil.
- Pat the steak dry and grill for 2-3 minutes per side for medium rare. Cover the steak with foil and let sit for 10 minutes before slicing.
- If using a grill pan, heat the pan until it is screaming hot, do not oil the pan, and grill as above.
