Gluten Free Chicken Roll Ups Recipe
I really began learning to cook in California in the 80’s. Goat cheese and sundried tomatoes were all the rage and oh-so gourmet back then. That’s probably why I love this recipe for gluten free chicken roll ups so much. They seem fancy enough for a dinner party but are really pretty simple to prepare. And goat cheese and sundried tomatoes are still a winning combination in my book.
You simply pound some chicken breasts (good for stress relief), fill them with a yummy mixture of goat cheese, tomatoes, and basil, roll them up, dip them in egg, then in Kinnikinnick gluten free panko crumbs, and bake them off.
Simple and delicious. That’s how I like my dinner!
Gluten Free Chicken Roll Ups Recipe
Ingredients
- 4 (4-6 ounce) boneless skinless chicken breast halves
- Kosher or fine sea salt
- Freshly ground black pepper
- 4 ounces soft goat cheese at room temperature
- 8 sundried tomatoes in oil patted dry and chopped
- 1 lemon zest finely grated and juiced
- 8 fresh basil leaves minced
- 1 large egg
- 1 cup Kinnikinnick gluten free panko bread crumbs
- Gluten free non-stick cooking spray
Instructions
- Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
- Place the chicken breasts (one at a time) between two pieces of waxed paper. Pound with a rolling pin or mallet until about ¼-inch thick and of even thickness throughout. Sprinkle both sides of the chicken with a pinch of salt and pepper.
- Combine the goat cheese with the sundried tomatoes, lemon zest, and basil. Divide the mixture between the chicken breasts and smooth into an even layer, keeping the mixture away from the edges. Roll the chicken up around the filling.
- Beat the egg lightly with ½ teaspoon salt and ¼ teaspoon pepper.
- Combine the bread crumbs with a pinch of salt and pepper and place on a plate or in a pie pan.
- Dip the chicken in the egg mixture then roll in the breadcrumbs, pressing lightly to help them adhere. Place on the prepared baking sheet, seam side down. Spray liberally with cooking spray. Cook for 20 minutes or until the chicken is firm to the touch. Remove from the oven, drizzle with lemon juice and serve.
