Mini Chia Pudding & Blueberry Nice Cream Parfaits

Ingredients
For the Chia Pudding:
- 2 tablespoons chia seeds
- ½ cup almond milk
- 1-2 teaspoons maple syrup
For the Blueberry Nice Cream:
- ⅓ cup frozen blueberries
- 1 frozen banana
- 1 teaspoon almond milk (maybe a splash more as needed)
- ½ teaspoon pure vanilla extract
Toppings:
- Raspberries, blackberries, and/or blueberries
Instructions
- The night before, make the chia pudding by whisking together the chia seeds, almond milk, and maple syrup in a glass container. Refrigerate overnight.
- In the morning, spoon the chia pudding into glasses/bowls.
- Make the nice cream by placing all the nice cream ingredients into a blender and blend until you get a soft ice cream-like consistency. (Note: Be careful not to add too much almond milk or it will become a smoothie! But also, you need enough to allow it to blend until it's smooth. Just add little splashes at a time.)
- Top the chia pudding with nice cream and fresh berries and serve immediately.
