Individual No Bake Gluten Free Vanilla Cheesecakes
My favorite dessert is cheesecake, and these Individual No Bake Gluten Free Vanilla Cheesecakes are the perfect size for a little dessert. With no baking required these cheesecakes are quick and easy to make. Best of all this recipe makes just enough to share with friends and family.
To make the crust you mix together the cracker crumbs, butter, and sugar and divide into 4 glasses or jars. Then you beat the heavy whipping cream until stiff peaks are formed. For the filling, you mix together the cream cheese, sugar, and Singing Dog Vanilla Bean Paste. Then you fold the whipped cream into the cheese mixture and fill the glasses and chill for 1-2 hours. After the cheesecakes are done chilling, I like to top mine with berries and more whipped cream.
These individual cheesecakes are perfect for a little sweet treat after dinner or even during the day.

Individual No Bake Gluten Free Vanilla Cheesecakes
Ingredients
- ½ cup gluten-free graham cracker crumbs
- 3 tablespoons unsalted butter , melted
- ½ teaspoon plus 4 tablespoons sugar , divided
- 1 cup heavy cream
- 8 ounces cream cheese , at room temperature
- 1 tablespoon Singing Dog Vanilla Bean Paste
- For serving:
- Berries
- Mint
- Powdered sugar
Instructions
- Combine cracker crumbs, melted butter, and ½ teaspoon sugar in a small bowl. Mix well. Divide between 4 small glasses or jars, press down. Refrigerate while making the filling.
- Beat heavy cream until stiff peaks form. Remove from mixing bowl.
- To same mixing bowl add cream cheese, 4 tablespoons sugar, and vanilla bean paste. Fold the whipped cream into the cheese mixture. Spoon filling over crusts and chill for 1–2 hours.
- Top with whipped cream, berries, and mint sprigs. Dust well with powdered sugar.
