No-Bake Jack O’Lantern Pie

Halloween is just around the corner and this season I am loving all the Halloween themed desserts out there. This No-Bake Jack O’Lantern Pie has got to be the best dessert I’ve seen. This pie is almost too cute to eat with a little jack o’lantern face on top of the pie. Impress your friends and family and bring this pie to any Halloween party.

To make this spooky treat is as easy as pie. You first start by grinding up the Flax 4 Life Chocolate Brownies into fine crumbs and then place in a mixing bowl with the dairy-free butter. Once combined you press firmly on a pie plate and refrigerate. For the filling, you combine the cream cheese, powdered sugar and vanilla extract in a mixer and beat until smooth. Then add the pumpkin puree, pumpkin pie spice, ground cinnamon, and salt to the cream cheese mixture until smooth. Once the mixture is done you pour in the pie crust and refrigerate for 4 hours. Then all that is left is to decorate the pie with the remaining brownie crumbs in a jack o’lantern pattern.

This pie is so much fun to make and enjoy. It is the perfect center piece for the dessert table at a Halloween party.

Ingredients

  • 12 ounces package Flax 4 Life Chocolate Brownies
  • 4 tablespoons melted dairy-free butter
  • 15 ounces can of pure pumpkin puree
  • 8 ounces package dairy-free cream cheese
  • ½ cup powdered sugar (or a powdered sweetener of your choice)
  • 1 teaspoon pure vanilla extract
  • 1 ½ teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  • Grind brownies in a food processor until fine crumbs. Measure out 2 cups and place in a mixing bowl with the melted dairy-free butter. Stir well combined and press into a 9-inch pie plate firmly. Refrigerate while making the filling. Save the rest of the crumbs to decorate the pie – save in a small food storage bag or other airtight container.
  • In a mixer, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and fluffy.
  • Add the pumpkin puree, pumpkin pie spice, ground cinnamon, and salt to the cream cheese mixture. Beat until all the ingredients are well combined and the filling is smooth. Pour into the pie crust and refrigerate for at least 4 hours.
  • Decorate the top of the pie with the leftover crumbs in a jack o’lantern pattern.
