Ingredients

For the Oatmeal Base and Topping:

  • 1 ½ cups gluten-free rolled oats
  • 1 cup gluten-free oat flour (or blend gluten-free oats in a food processor until fine)
  • ½ cup coconut sugar or brown sugar
  • ½ tsp ground cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup melted coconut oil or vegan butter
  • 2 tbsp maple syrup
  • ½ cup dried cranberries
  • ¼ cup chopped pistachios

For the Apple Butter Filling:

  • Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper and spray lightly with gluten-free nonstick cooking spray.
