Breadless “Bread” Sticks

Just because you’ve given up grains doesn’t mean you can’t have the traditional crusty piece of “bread” to schlop up your stews. This grain-free recipe is not dairy-free but uses full-fat Greek yogurt, which many Primal eaters consider a good source of fat and good bacteria. Substitute dairy-free yogurt to make this recipe without dairy. You can also easily alter the flavor of these breadsticks towards your dishes by adding herbs and spices. Having an Italian meal? Add in some basil, rosemary, and oregano. Indian? Toss in some curry powder.

Breadless “Bread” Sticks

Ingredients 

  • 2 cups almond meal
  • ¼ cup coconut flour
  • ¼ cup flax meal
  • 2 tablespoons arrowroot starch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon baking soda
  • 2 eggs, , beaten
  • ½ cup plain full-fat Greek yogurt, (or dairy-free yogurt)
  • 2 tablespoons liquid fat, , such as melted ghee, butter, or grape seed oil

Instructions 

  • Preheat the oven to 375ºF. In a large bowl, mix the almond meal, coconut flour, flax meal, arrowroot starch, garlic powder, onion powder, and baking soda together. Stir in the beaten eggs, yogurt, and fat. The dough will appear very mushy and not dough-like at all. Don’t worry. This is okay.
  • On a parchment-lined cookie sheet, spread the mixture out into a square-like shape about ¼-inch thick. Using a pizza cutter, score 12-14 cuts for your breadsticks. This makes them break perfectly into shape once cooled. Bake for 15-20 minutes until browned. Check often after 10 minutes as time will vary based on the oven and the thickness of the batter.
