When you’re craving that tangy flavor of buffalo wings but don’t want the meat or want something a little healthier, how about swapping the wings for a veggie? This Buffalo Cauliflower Bites with Ranch Dipping Sauce recipe is a great alternative to wings, is baked – not fried, and is a breeze to make.

For some added nutrition and to get in a daily dose of collagen, I like to stir a few tablespoons of NeoCell Super Collagen into my homemade ranch dressing. It’s a great way to incorporate collagen and doesn’t change the taste or texture of the dressing.

I’ve heard rumors that it’s football season (I wouldn’t really know first-hand, but I believe it to be true) – so why not throw together a batch of these delicious appetizers if you and the family are planning on having a football watch party? Buffalo Cauliflower Bites with Ranch Dipping Sauce Recipe

Ingredients 

Ranch Dipping Sauce

  • ¼ cup mayonnaise
  • 3 tablespoons buttermilk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon kosher or fine sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 4 tablespoons NeoCell Super Collagen
  • 1 tablespoon minced chives

Buffalo Cauliflower Bites

  • 1 head cauliflower, broken into florets
  • 2 tablespoons olive oil
  • ¼ teaspoon kosher or fine sea salt
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons hot sauce, such as Franks
  • 1 tablespoon sriracha sauce

Instructions 

Ranch Dipping Sauce

  • Combine all ingredients in a mixing bowl, whisking until well combined. Cover with plastic wrap and refrigerate until serving time.

Buffalo Cauliflower Bites

  • Preheat oven to 450 degrees and spray a rimmed baking sheet with gluten-free non-stick cooking spray.
  • Toss the cauliflower with olive oil and salt. Spread into an even layer on the prepared baking sheet. Roast cauliflower for 15-20 minutes or until tender and beginning to brown.
  • Combine the melted butter, hot sauce, and sriracha in a mixing bowl. Add the roasted cauliflower and toss to coat.
