Butternut Squash with Dried Cherries & Pomegranate Seeds

Ingredients 

  • 16 ounces diced butternut squash
  • ¼ cup dried cherries
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher or fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ounces pomegranate seeds

Instructions 

  • Preheat the oven to 375°F. Lightly grease a baking sheet.
  • Place the butternut squash in a large bowl with the dried cherries. Add the olive oil and spices to the bowl and stir to combine. Place onto the baking sheet and roast for 30-35 minutes. Pour back into the bowl and toss with pomegranate seeds.
