Butternut Squash with Dried Cherries & Pomegranate Seeds
Ingredients
- 16 ounces diced butternut squash
- ¼ cup dried cherries
- 1 tablespoon olive oil
- ¼ teaspoon kosher or fine sea salt
- ¼ teaspoon freshly ground black pepper
- 4½ ounces pomegranate seeds
Instructions
- Preheat the oven to 375°F. Lightly grease a baking sheet.
- Place the butternut squash in a large bowl with the dried cherries. Add the olive oil and spices to the bowl and stir to combine. Place onto the baking sheet and roast for 30-35 minutes. Pour back into the bowl and toss with pomegranate seeds.
