Easy Gluten-Free Vegan Main Dish
If you’ve never tried cauliflower steak before, this is your sign.
It’s simple, surprisingly satisfying, and one of my favorite ways to turn a humble vegetable into something that feels like a true main dish. Thick slices of cauliflower are roasted until golden and tender, then finished with savory seasoning and a light crispy topping.
It’s the kind of recipe that feels a little elevated, but is actually incredibly easy to make.

Why You’ll Love This Cauliflower Steak
This recipe is all about simple ingredients coming together in the best way:
- Naturally gluten-free and vegan
- Hearty enough to serve as a main dish
- Crispy edges with a tender, almost buttery center
- Full of savory, herb-forward flavor
- Perfect for weeknights or entertaining
Cauliflower has a way of transforming when roasted—it becomes caramelized, slightly nutty, and incredibly satisfying.
What Is a Cauliflower Steak?
A cauliflower “steak” is simply a thick slice cut from the center of a cauliflower head, keeping the stem intact so it holds together while cooking.
When roasted at a high temperature, it develops golden edges and a tender texture that makes it feel substantial enough to serve as a centerpiece—not just a side.
And while it’s not trying to be meat, it definitely brings that same “knife-and-fork” kind of experience to the table.
What Makes This Recipe Special
This version keeps things simple but adds just enough flavor to make it stand out.
The cauliflower is brushed with a savory blend of olive oil, gluten-free poultry seasoning, and a touch of gluten-free soy sauce, then finished with a light sprinkle of breadcrumbs for texture.
As it roasts, the edges crisp up while the inside becomes perfectly tender, giving you that contrast of textures in every bite.
What You’ll Need
This recipe uses just a handful of pantry-friendly ingredients:
- One large head of cauliflower
- Extra-virgin olive oil
- Gluten-free poultry seasoning
- Gluten-free soy sauce
- Gluten-free breadcrumbs
That’s it. Simple ingredients, big payoff.
Tips From My Kitchen
Keep the stem intact
This helps the cauliflower hold together when slicing and roasting.
Cut thick slices
Aim for about 1 to 1½ inches thick so they don’t fall apart.
Don’t worry about extra florets
If pieces break off, just roast them alongside the steaks—they’ll still be delicious.
Roast at high heat
A hot oven helps create those golden, slightly crispy edges.
Flip carefully
Use a wide spatula to keep the steaks intact when turning.
How to Serve Cauliflower Steak
This dish is incredibly versatile. You can serve it as:
- A vegetarian main course
- A hearty side dish
- A base for grains or salads
- A centerpiece for holiday meals
It pairs beautifully with fresh herbs, sauces, or even a simple squeeze of lemon.
Easy Ways to Customize
Once you’ve made it once, you’ll start seeing how flexible it is:
- Add a drizzle of chimichurri or tahini sauce
- Top with sautéed mushrooms or caramelized onions
- Sprinkle with nutritional yeast for a cheesy flavor
- Add a squeeze of lemon for brightness
- Swap breadcrumbs for crushed nuts for a different texture
Cauliflower really is one of those “blank canvas” ingredients that works with almost anything.

Cauliflower Steak
Ingredients
- 1 large head of cauliflower
- ¼ cup extra-virgin olive oil
- 1 tablespoon gluten-free poultry seasoning
- 1 teaspoon gluten-free soy sauce
- 2 tablespoons gluten-free breadcrumbs
Instructions
- Preheat the oven to 450°F.
- Carefully trim the outer leaves, leaving the stem intact. This helps the cauliflower steak stay together. Slice directly through the middle of the cauliflower head. Carefully cut 1-1 ½ inch thick slices. You should be able to get 2 large steaks out of a head of cauliflower.
- Gently place the cauliflower slices onto a foil-lined baking sheet.
- Whisk together the olive oil, poultry seasoning, and soy sauce until well combined, and then generously brush half of the marinade over the cauliflower steaks, reserving half for the other side.
- Sprinkle with breadcrumbs using about ½ tablespoon per steak, per side. Bake in the oven for 13-15 minutes, until the cauliflower begins to brown.
- Carefully flip each cauliflower steak, brush the rest of the marinade over the top, sprinkle with remaining breadcrumbs and return to the oven for another 8-10 minutes.
