- 4 ounces gluten-free beer
- 1 large egg
- 1 tablespoon vanilla extract
- 1¼ cups all purpose gluten-free flour blend
- ¼ teaspoon sea salt
- ¾ cup fresh or jarred cherries, coarsely chopped (apples or cranberries will also work well)
- ¾ cup chocolate chips
- Fresh whipped cream or vanilla ice cream, for serving
Instructions
- Preheat the oven to 350ºF. Lightly grease the bottom and sides of an 8×8-inch baking dish with butter.

- Add the sugar and stir constantly until it dissolves, about 1 minute.
- Slowly add in the gluten-free beer and simmer for 2 minutes over low heat.
- Remove from heat and let cool for about 5 minutes.
- Once cool, whisk in the egg and vanilla.
- In a separate bowl, combine the flour blend and sea salt.

- Fold in the cherries and chocolate chips.
- Pour into the prepared pan and bake for 25-30 minutes, until the edges pull away slightly from the sides and the center feels firm to the touch.
- Allow to cool for 1 hour before slicing and serving.
- Serve with fresh whipped cream or vanilla ice cream.
