This Citrus Chicken & Quinoa Salad is perfect for a quick summer meal.
Citrus Chicken & Quinoa Salad
Ingredients
- 2 6-8 ounce chicken breasts
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 3 cups cooked quinoa, cooled
- 1 large orange, zested then peeled and cut into segments
- 1 medium avocado, pitted and diced
- 1 medium lime, zested and juiced
- 2 teaspoons honey
- ¼ cup fresh cilantro, finely chopped
Instructions
- Heat a grill to medium heat. Season the chicken breasts with salt and pepper. Grill the chicken breasts until no longer pink inside, about 5-6 minutes per side. Remove from the grill and set aside to cool to room temperature.
- When cool, chop the chicken into bite-sized pieces and add to a large bowl along with the quinoa, orange segments, and avocado.
- In a small bowl, combine 1 teaspoon orange zest, 1 teaspoon lime zest and the juice of the lime. Add the honey and whisk together. Season to taste with salt and pepper. Pour the dressing over the salad and add the cilantro. Toss to coat.
- Serve immediately or refrigerate until ready to serve.
