Cobbler on the Grill
Ingredients
- 1½ cups gluten-free biscuit mix, such as gluten-free Bisquick
- ½ cupplus 2 tablespoons granulated sugar, divided use
- 1 cup milk or dairy-free milk
- 4 tablespoons butter or dairy-free butter substitute
- 1½ cups thawed peach slices, fresh or frozen
- 1 cup thawed blueberries, fresh or frozen
Instructions
- Heat a grill to medium, about 350-400ºF.
- Combine the biscuit mix, ½ cup sugar, and milk. Mix until smooth.
- Put the butter in an 8-inch disposable foil cake pan and place on the grill over direct heat until the butter is melted. Swirl the butter to coat the pan. Pour the batter over the butter and top with the peach slices and blueberries. Sprinkle with 2 tablespoons sugar.
- Place the pan back on the grill over indirect heat, close the lid, and cook for 30 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean. Can be served warm, at room temperature, or cold.
