Creamy Lemon Garlic Pasta with Chicken & Broccoli

Creamy Lemon Garlic Pasta with Chicken & Broccoli
Ingredients
- 1 pound gluten-free pasta of choice
- 1½ cups plain Greek yogurt, use non-dairy yogurt for dairy-free
- ½ cup milk of choice, plus more if needed
- 3 garlic cloves, pressed
- Juice of 1 lemon
- ¼ cup chopped parsley
- Salt and black pepper, to taste
- Red chili flakes, to taste (optional)
- 3 cups broccoli florets
- 2 chicken breasts, grilled and chopped or shredded
- Freshly grated Parmesan cheese, omit for dairy-free
Instructions
- Prepare the pasta according to the package instructions.
- While the pasta is cooking, whisk together the yogurt, ½ cup milk, garlic, lemon juice, and parsley. Add more milk if needed to create desired consistency. Season to taste with salt, pepper, and chili flakes (if using). Set aside.
- When the pasta is almost al dente, add the broccoli to water and blanch for 60 seconds. Remove with a slotted spoon and set aside.
- Drain the pasta and return it to the pot. Add the chicken, broccoli, and yogurt sauce. Toss to coat. Serve immediately garnished with freshly grated Parmesan, if using.
