Creamy Lemon Garlic Pasta with Chicken & Broccoli

Ingredients 

  • 1 pound gluten-free pasta of choice
  • cups plain Greek yogurt, use non-dairy yogurt for dairy-free
  • ½ cup milk of choice, plus more if needed
  • 3 garlic cloves, pressed
  • Juice of 1 lemon
  • ¼ cup chopped parsley
  • Salt and black pepper, to taste
  • Red chili flakes, to taste (optional)
  • 3 cups broccoli florets
  • 2 chicken breasts, grilled and chopped or shredded
  • Freshly grated Parmesan cheese, omit for dairy-free

Instructions 

  • Prepare the pasta according to the package instructions.
  • While the pasta is cooking, whisk together the yogurt, ½ cup milk, garlic, lemon juice, and parsley. Add more milk if needed to create desired consistency. Season to taste with salt, pepper, and chili flakes (if using). Set aside.
  • When the pasta is almost al dente, add the broccoli to water and blanch for 60 seconds. Remove with a slotted spoon and set aside.
  • Drain the pasta and return it to the pot. Add the chicken, broccoli, and yogurt sauce. Toss to coat. Serve immediately garnished with freshly grated Parmesan, if using.
