These Cucumber Feta Mint Rolls are made with a handful of fresh ingredients and are the perfect appetizer for a spring or summer gathering.

Cucumber Feta Mint Rolls

Ingredients 

  • 4 ounces feta cheese, , crumbled
  • 15-20 fresh mint leaves, , finely chopped
  • 1 small clove garlic, , finely minced
  • 2 teaspoons olive oil
  • ¼ teaspoon kosher or fine sea salt
  • 1 medium cucumber, , sliced lengthwise into 8-10 slices, about ⅛-inch thick (a mandoline works best for this)
  • 1 tablespoon fresh chives, , finely chopped

Instructions 

  • In a small bowl, combine feta, mint, garlic, olive oil, and salt until well combined and fairly smooth.
  • Lay out the cucumber ribbons and spread about 2 teaspoons of the feta and mint mixture down the center of each cucumber slice. Carefully roll the cucumber slice all the way and then secure with a small skewer or toothpick. Repeat with each cucumber slice. Garnish with chives.
