Gluten Free Easy Pesto Pasta with Spinach Recipe

What’s great about pasta is its versatility. There are hundreds, if not thousands, of ways to make pasta and we have a somewhat healthy spin on a classic pasta and sauce combo – gluten-free pasta tossed in a delicious kale pesto.
Gluten Free Easy Pesto Pasta with Spinach Recipe
Ingredients
- 1 pound gluten-free pasta
- 2 cups fresh basil
- 1 cup chopped kale
- 1 garlic clove
- ½ cup nutritional yeast or Parmesan cheese, plus more for garnish
- ¼ cup hemp seeds or pine nuts, plus more for garnish
- Kosher or fine sea salt, to taste
- Freshly ground black pepper, to taste
- Juice of 1 lemon
- 2 tablespoons olive oil
- 2 tablespoons water, plus more as needed
- 3 cups spinach, chopped
Instructions
- Cook pasta according to package instructions.
- While the pasta is cooking, prepare the pesto. Put basil, kale, garlic, nutritional yeast, hemp seeds, salt, and pepper into a food processor. Process until ground, then add lemon juice. Secure lid and slowly drizzle in oil and water until pesto comes together. If it seems dry, add additional water or oil, 1 tablespoon at a time, until you’ve reached the desired consistency. Set aside until pasta is ready.
- Drain the pasta, reserving 2 tablespoons of the cooking water. Return pasta to the pot. Add the reserved cooking water, pesto, and spinach, and stir until combined.
- Serve, garnished with hemp seeds and additional nutritional yeast, if desired.
