  • Grate the sweet potato using a box grater or food processor. Use a clean kitchen towel or paper towels to squeeze out as much moisture as possible.
  • In a mixing bowl, combine the grated sweet potato, crushed chips, eggs (or flax eggs), green onion, flour, and seasonings. Mix until fully combined.
  • Form the mixture into 12 small patties, about ½ inch thick.
  • Preheat the air fryer to 375°F. Lightly grease the basket and the tops of the cakes with olive or avocado oil spray. Air fry for 10–12 minutes, flipping halfway, until golden brown and crispy on the edges.
