Gluten Free Falafel Bread Recipe

There is nothing like the smell of bread baking to make your home feel all cozy and comfy.
And of course, eating freshly baked gluten free bread is a treat! It is even more of a treat when a machine does most of the work for you.
I recently received a Zojirushi Virtuoso Breadmaker to try out and I gotta say, I loved it! Not only does it make a traditional shaped loaf of bread, it even has a special gluten free setting. It also came with a complete instructional guide that makes it even easier to create great gluten free bread.
I decided to go a little exotic with this recipe – I made a Gluten Free Falafel bread recipe. The taste, texture, and aroma of this bread is amazing. And it makes the BEST grilled cheese sandwiches.
The recipe below is for making in a breadmaker with a gluten free setting that produces a two pound loaf of bread.
Gluten Free Falafel Bread Recipe
Ingredients
- 1½ cups water
- 2 large eggs, lightly beaten
- 1 teaspoon apple cider vinegar
- 1½ cups garbanzo bean flour
- 1 cup tapioca starch
- ¾ cup cornstarch
- ½ cup sweet rice flour, also called glutinous rice flour
- 1 tablespoon xanthan gum
- 2 teaspoons ground cumin
- 2 tablespoons sugar
- ½ cup dry milk powder
- 1½ teaspoons kosher or fine sea salt
- 3 tablespoons olive oil
- ½ cup chopped chives
- 2 cloves garlic, minced
- 1 tablespoon dry active yeast
- 1 16-ounce can garbanzo beans, rinsed, drained and finely chopped
Instructions
- Combine the water, eggs, and vinegar and pour into the pan of the breadmaker.
- Whisk together the garbanzo bean flour, tapioca starch, cornstarch, sweet rice flour, xanthan gum, and cumin. Pour over the liquid in the breadmaker.
- On top of the flour mixture, put the sugar, milk powder, salt, olive oil, chives, and garlic. Make a little well in the center and add the yeast.
- Program the breadmaker to the gluten free setting and medium crust, and start the machine. When the timer beeps (in about 45 minutes), add the garbanzo beans, stir into the dough, and scrape down the sides of the pan of the breadmaker with a spatula. Smooth the top of the dough.
- When the bread is done, remove from the breadmaker pan and cool on a wire rack.

Any idea how to make this the conventional oven way?? I hate buying more expensive machines that I will only use once in awhile.

I formulated that recipe specifically for the bread maker. But, I’ve had a number of requests for it, so I’m going to have to test it out before telling you how to do it. I’ll let you know!
