Gluten-Free Granola Pancakes

Ingredients 

  • cups gluten-free all-purpose flour blend
  • 2 tablespoons sugar
  • teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon kosher or fine sea salt
  • 2 large eggs
  • 1 cup milk of choice
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon melted butter or dairy free butter, , plus more for cooking the pancakes
  • 1 cup Flax 4 Life Apple Cinnamon Snacking Granola, , crumbled, plus more for serving
  • Pure maple syrup

Instructions 

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. In a small mixing bowl, whisk together the eggs, milk, and vanilla. Add the wet ingredients to the dry and mix well. Stir in the granola.
  • Heat a skillet over medium heat until a drop of water sizzles instantly. Melt some butter on the skillet and ladle on ¼ cup of pancake batter for each pancake. Cook until the edges look dry, bubbles form on the surface of the pancake, and the bottom is golden brown, about 3-4 minutes. Flip and cook for another 2 minutes or until the bottom is golden brown.
  • Serve with maple syrup and some more granola on top.
