This Gluten Free Soba Sesame Noodles is a great easy and simple weeknight dinner. Soba noodles are a Japanese noodle that is a great food to add to a healthy diet. These noodles are full of fiber, promotes gut health, and promotes the great absorption of nutrients as well. Best of all soba noodles are made with gluten-free buckwheat flour.

 To make this recipe you start out with cooking the Eden Gluten Free Buckwheat Soba Noodles. While the noodles are cooking you whisk together the tamari, Eden Organic Black Sesame Oil, vinegar, sugar, and pepper. Then in a skillet you add the shallots, garlic, and ginger as well as the sesame oil mixture for about 30 seconds. Once that mixture is fragrant you add the noodles and toss until heated and coated. Then you add the green onions and Eden Shake and garnish with chili oil if desired.

Gluten Free Soba Sesame Noodles

Ingredients 

  • 2 (8 ounce) packages Eden Gluten Free Buckwheat Soba Noodles
  • 1/3 cup tamari
  • 3 tablespoons Eden Organic Black Sesame Oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon coconut sugar
  • ½ teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 large shallot, , minced
  • 3 cloves garlic, , minced
  • 1 tablespoon ginger paste
  • Bunch green onions, , cut into ½ inch slices on the diagonal
  • 3 tablespoons Eden Shake, , divided
  • Chili oil, , optional

Instructions 

  • Bring a large pot of water to a boil. Add the soba noodles and cook, stirring occasionally so they don’t clump, for 8 minutes or until tender. Drain and rinse with cold water.
  • Whisk together the tamari, sesame oil, vinegar, sugar, and pepper.
  • Heat the vegetable oil in a large skillet or wok until it begins to shimmer, add the shallot, garlic, and ginger paste, and cook, stirring for about 30 seconds or until fragrant. Add the sesame oil mixture and cook for 30 seconds. Add the noodles and cook, tossing until the noodles are coated and heated through. Add the green onions and half the Eden Shake. Give a quick toss and garnish with the rest of the Eden Shake and chili oil if desired.
