I love recipes that take something I love and turn it into something new that I love! Take this Gluten-Free SunButter Apple Crisp recipe, which is inspired by one of my favorite snacks – apple slices and SunButter. I took something I love and turned it into something I can share with others. What’s not to love about that?

Something else to love about this recipe is the fact that it is made with ingredients that I consider pantry staples: oats, gluten-free flour, sugar, butter, and SunButter (a nut-free sunflower seed spread). Apples and lemons are also pretty common in my kitchen but if they aren’t in yours, they’re a quick grocery grab away!

You can make this recipe dairy-free by using dairy-free butter and serving with dairy-free ice cream or whipped cream topping.

Gluten-Free SunButter Apple Crisp Recipe

Ingredients 

Filling:

  • 4 large apples, peeled, cored and diced
  • 1 tablespoon fresh lemon juice
  • ½ cup sugar
  • 2 tablespoons gluten-free flour

Topping:

  • cups quick-cook gluten-free oats
  • ½ cup gluten-free flour
  • ½ cup brown sugar
  • ½ teaspoon kosher or fine sea salt
  • ½ cup creamy SunButter
  • ¼ cup unsalted butter, softened

Instructions 

  • Preheat the oven to 350 degrees. Grease a 9x9-inch baking dish (or similar).
  • In a large bowl, toss the apples, lemon juice, sugar, and 2 tablespoons flour. Pour into the prepared baking dish.
  • In another mixing bowl, combine the oats, ½ cup flour, brown sugar, and salt. Add the SunButter and butter and work into the oat mixture until it reassembles coarse crumbs. Sprinkle the topping evenly over the apples.
  • Bake for 45 minutes or until the topping is golden brown and the filling is bubbly.
  • Serve warm with ice cream or whipped cream, if desired.
