If you’re anything like me, you immediately carved the rest of the turkey and saved it in batches – some sliced, some shredded, some refrigerated and some frozen. If you have leftover turkey in the fridge still, it’s no good – toss it! But, if you froze some of it, I suggest taking it out to thaw now because I have an excellent recipe for Gluten-Free Thai Pulled Turkey Sandwiches to use up that turkey.

If you didn’t have enough leftovers to freeze or you already ate all yours, then pick up a gluten-free rotisserie chicken from your local grocery store (ask the deli if it’s gluten-free) and use that instead. Or, you can bookmark this recipe for after Christmas if you plan to have turkey for Christmas dinner.

What I love about this recipe is that it is completely different from all the traditional holiday food that is currently bombarding all recipe sites, Instagram, and Pinterest. I love holiday food like the rest of them, but every now and then in the months of November and December, it’s nice to have something that is more for every day.

For this recipe, make sure your hamburger buns and soy sauce are both gluten-free and, as mentioned, your rotisserie chicken if you’re using one. To make this recipe nut-free and still have that Thai peanutty taste, I’ve used SunButter – a sunflower seed spread that has a nutty, roasted flavor.

This is delicious year-round and convenient for the holiday season when leftover meat is plentiful.

Gluten-Free Thai Pulled Turkey Sandwiches Recipe

Ingredients 

  • ½ cup chicken broth
  • 1/3 cup Creamy SunButter
  • 1 lime, juiced
  • 2 tablespoons honey
  • 1 tablespoon chili garlic sauce
  • 1 tablespoon tamari or gluten free soy sauce
  • 4 cups shredded cooked turkey or chicken
  • 1 red bell pepper, seeded, deveined, and thinly sliced
  • ½ cup chopped cilantro leaves
  • 4 gluten free hamburger buns
  • Prepared coleslaw, optional

Instructions 

  • Combine the chicken broth, SunButter, lime juice, honey, chili garlic sauce, and tamari in a saucepan and heat over medium heat, stirring occasionally, until the SunButter is melted and the sauce is hot. Add the turkey and red bell pepper and continue to cook until the turkey is warmed and fully coated with the sauce. Take off the heat, stir in the cilantro and serve on hamburger buns. Add coleslaw, if desired.
