Tri-Pepper Turkey Fajitas

Tri-Pepper Turkey Fajitas
Ingredients
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon ground cumin
- 2 teaspoons adobo
- 2 teaspoons lime juice
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 green peppers, , seeds removed, cut into strips
- 1 red pepper, , seeds removed, cut into strips
- 1 orange or yellow pepper, , seeds removed, cut into strips
- 1 medium sweet onion, , cut into strips
- 3 cups cooked chicken or turkey, , cut into strips
- 12 corn tortillas, , heated and kept warm
Optional:
- 1 cup chopped fresh cilantro or parsley
- 1 avocado, , seeded and sliced
- 1 cup cherry tomatoes, , quartered
Instructions
- In a large heavy-bottomed skillet, heat the olive oil. Add the cumin, adobo, lime juice, salt, and pepper to the olive oil. Add the peppers and onions to the hot oil. Saute the vegetables on medium-high heat for 5-10 minutes until the peppers and onions are caramelized, soft, and tender.
- Add the cooked chicken or turkey. Cook for an additional 5-10 minutes until the chicken is warmed through. Adjust the spices if needed. Serve with chopped cilantro or parsley, sliced avocados, and quartered cherry tomatoes in warm corn tortillas.
