Grilled Prosciutto-Wrapped Pears with Caramelized Onions

Ingredients

  • 3 tablespoons butter
  • 4 large sweet onions, peeled and sliced
  • Pinch of salt
  • ½ pound prosciutto, sliced medium thickness
  • 3-4 medium pears, peeled, cored, and sliced

Directions

  1. In a large saucepan on medium heat, melt the butter.
  2. Add the onions and salt. Cover and cook until the onions are translucent.
  3. Remove cover, turn heat to high, and cook, stirring frequently, until onions are brown and caramelized.
  4. While the onions are cooking, you can prepare your pears: simply wrap 1-2 slices of prosciutto around each pear slice.
  5. Grill for about 2 minutes per side on high heat, until the prosciutto gets dark and changes color.
  6. Keeping the heat on high and only cooking briefly allows the prosciutto to get crispy without turning the pears to mush.
  7. Top your pears with the caramelized onions and serve.

Servings

Makes about 15-20 wrapped pears (about 6 servings)
