Grilled Prosciutto-Wrapped Pears with Caramelized Onions

Ingredients
- 3 tablespoons butter
- 4 large sweet onions, peeled and sliced
- Pinch of salt
- ½ pound prosciutto, sliced medium thickness
- 3-4 medium pears, peeled, cored, and sliced
Directions
- In a large saucepan on medium heat, melt the butter.
- Add the onions and salt. Cover and cook until the onions are translucent.
- Remove cover, turn heat to high, and cook, stirring frequently, until onions are brown and caramelized.
- While the onions are cooking, you can prepare your pears: simply wrap 1-2 slices of prosciutto around each pear slice.
- Grill for about 2 minutes per side on high heat, until the prosciutto gets dark and changes color.
- Keeping the heat on high and only cooking briefly allows the prosciutto to get crispy without turning the pears to mush.
- Top your pears with the caramelized onions and serve.

Makes about 15-20 wrapped pears (about 6 servings)
