Simple and refreshing, this Grilled Watermelon & Peach Arugula Salad has all the best parts of summer tossed together!

Grilled Watermelon & Peach Arugula Salad
Ingredients
- 2 packed cups, (40 g) arugula
- 1 large peach, , sliced
- 3 large slices watermelon
- 2 tablespoons (20 g) hemp seeds
For the Balsamic Dressing:
- 1½ teaspoons (7.5 mL) balsamic vinegar
- 1 tablespoon (15 mL) grapeseed oil
- ¼ teaspoon (1.5 g) kosher or fine sea salt
Instructions
- Heat a grill over medium heat. Alternatively, you can use an inside stovetop griddle. Add the watermelon and peach slices to the grill (or griddle) and grill for about 10 minutes, flipping halfway through.
- Meanwhile, add the arugula to a medium bowl and toss with all the balsamic dressing ingredients. Once the fruit is grilled, add to the bowl, or plate and top with hemp seeds.
