Homemade Pistachio Pesto

Ingredients 

  • 1 cup roasted pistachios, , shelled
  • 3 cups fresh basil
  • 3 garlic cloves
  • ¼ cup nutritional yeast
  • Juice of 1 lemon
  • ¼ – 1/3 cup extra-virgin olive oil
  • Salt and pepper, , to taste

Instructions 

  • Add the pistachios to the bowl of a food processor.
  • Pulse 10-15 times until they resemble the texture of coarse sand.
  • Add the basil, garlic, nutritional yeast, and lemon juice.
  • Turn on and add olive oil as the mixture processes.
  • Continue processing until almost smooth, 30-60 seconds.
  • Season with salt and pepper to taste.
