Homemade Pistachio Pesto
Ingredients
- 1 cup roasted pistachios, , shelled
- 3 cups fresh basil
- 3 garlic cloves
- ¼ cup nutritional yeast
- Juice of 1 lemon
- ¼ – 1/3 cup extra-virgin olive oil
- Salt and pepper, , to taste
Instructions
- Add the pistachios to the bowl of a food processor.
- Pulse 10-15 times until they resemble the texture of coarse sand.
- Add the basil, garlic, nutritional yeast, and lemon juice.
- Turn on and add olive oil as the mixture processes.
- Continue processing until almost smooth, 30-60 seconds.
- Season with salt and pepper to taste.
