How to Clean Leeks

Cut off and discard the root end of the leek.
Cut white and bottom 3/4 of light green part of leek in half lengthwise, leaving top of leaves intact..
Cut leek lengthwise again as in Step 2,cutting into quarters.
Using the top of leaves as a handle, rinse the cut portions of the leek under cool running water, fanning them apart to remove all dirt and grit.
