Jelly Donut Muffins
Ingredients
For the muffins:
- Gluten-free nonstick cooking spray
- 3 eggs, room temperature
- ¼ cup melted coconut oil
- 3 tablespoons unsweetened almond milk
- 2 tablespoons coconut sugar
- ½ teaspoon vanilla extract
- 1 cup blanched almond flour
- ¼ cup arrowroot starch
- ¼ teaspoon salt
- ¼ teaspoon baking soda
For the filling and topping:
- ½ cup naturally sweetened jam or preserves
- 2 tablespoons coconut sugar
- ½ teaspoon ground cinnamon
- 2 tablespoons melted coconut oil
Instructions
- Preheat the oven to 350ºF. Spray a mini muffin tin with nonstick cooking spray.
- Combine the eggs, coconut oil, almond milk, coconut sugar, and vanilla extract in a blender and blend until smooth and light, about 2 minutes.
- Add the almond flour, arrowroot starch, salt, and baking soda.
- Blend again for 2-3 minutes, until very smooth, scraping down the sides of the blender as needed.
- Pour or scoop the batter evenly into 16 mini muffin molds.
- Bake for 10 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
- Cool for 5 minutes, then carefully transfer to a wire rack to finish cooling.
- Fit a pastry decorating bag with a small round tip and fill the bag with the jam.
- Carefully insert the tip into the top of a muffin and gently squeeze to fill the muffin with jam.
- Stop just as the muffin feels “full.” (If excess jam leaks out, you can wipe it away with a clean dish towel, but the topping will cover it as well.)
- For the topping, combine the coconut sugar and cinnamon in a small bowl.
- Working with one muffin at a time, brush the top with melted coconut oil and then gently dip into the sugar-cinnamon mixture.
- Repeat with remaining muffins.
