Mexican Pizzas

Ingredients 

  • 1 15 ounce can of black beans, drained and rinsed
  • ½ cup salsa, plus more for serving
  • 1 tablespoon water
  • 1 teaspoon ground cumin
  • ½ teaspoon kosher or fine sea salt
  • ½   teaspoon freshly ground black pepper
  • 4 gluten-free individual pizza crusts, 7-8 inches in diameter
  • 1 cup grated cheddar cheese or dairy-free cheese alternative
  • 2 large tomatoes, chopped
  • 2.5 ounce can sliced black olives, drained
  • 2 avocados, pitted and diced
  • ¼ cup sour cream or dairy-free sour cream alternative
  • ¼ cup cilantro leaves, chopped

Instructions 

  • Combine the beans, ½  cup salsa, water, cumin, salt, and pepper in a blender. Process until smooth. Spread the mixture on the pizza crusts. Top with grated cheese and cook until cheese is melted, about 5 minutes on the grill. Top the pizzas with tomatoes, olives, diced avocado, sour cream, cilantro, and more salsa as desired.
