Mexican Pizzas
Ingredients
- 1 15 ounce can of black beans, drained and rinsed
- ½ cup salsa, plus more for serving
- 1 tablespoon water
- 1 teaspoon ground cumin
- ½ teaspoon kosher or fine sea salt
- ½ teaspoon freshly ground black pepper
- 4 gluten-free individual pizza crusts, 7-8 inches in diameter
- 1 cup grated cheddar cheese or dairy-free cheese alternative
- 2 large tomatoes, chopped
- 2.5 ounce can sliced black olives, drained
- 2 avocados, pitted and diced
- ¼ cup sour cream or dairy-free sour cream alternative
- ¼ cup cilantro leaves, chopped
Instructions
- Combine the beans, ½ cup salsa, water, cumin, salt, and pepper in a blender. Process until smooth. Spread the mixture on the pizza crusts. Top with grated cheese and cook until cheese is melted, about 5 minutes on the grill. Top the pizzas with tomatoes, olives, diced avocado, sour cream, cilantro, and more salsa as desired.
