No-Churn Honey Berry Ice Cream

Imagine, for a moment, a land where water is abundant, exotic animals roam wild, palm trees tower over homes, and white sandy beaches are as beautiful as they are plentiful. Welcome to Florida. I may have left out a few details. Those exotic reptiles are alligators. The palm trees might fall on your house if there’s a hurricane. Water is abundant in the form of oceans, but also storms. The thing about the white sandy beaches stands true. This unique place is where I call home and most of the year, I love it, but some days it’s absolutely, excruciatingly HOT! Summer in Florida is fiery, so just like SPF and a wide-brim hat, ice cream is an essential here.
This No-Churn Honey Berry Ice Cream recipe is a delicious treat that can be whipped up in minutes and requires no ice cream maker. It needs to be frozen for 6 hours, but if you make it at night you can enjoy it the next day when the temperatures start to climb.
Recipe notes: We used a bag of frozen mixed berries. You can certainly choose to use a bag of all one type of berry, if you prefer. We also used organic, pesticide-free honey and organic heavy cream. If you can find organic sweetened condensed milk, I recommend that, too.
No-Churn Honey Berry Ice Cream
Ingredients
- 1 (12-ounce) bag frozen mixed berries, , no need to thaw
- 2 cups heavy cream
- ½ teaspoon kosher or fine sea salt
- 1 (14-ounce) can sweetened condensed milk
- ¼ cup Wholesome Organic Honey
- Berries and mint for garnish - optional
Instructions
- Place the berries in a food processor and process until finely chopped.
- Pour the cream and salt into the bowl of an electric mixer fitted with the whisk attachment and whip until stiff peaks are achieved, about 2 minutes.
- Using a spatula, fold in the berries, sweetened condensed milk, and honey until fully combined. Transfer the mixture into a freezer-safe container (a 9-inch loaf pan works well) and cover. Place in the freezer until solid, about 6 hours.
- Serve garnished with berries and mint, if desired.
