Paleo Maple Bacon Chocolate Chip Cookies

Paleo Maple Bacon Chocolate Chip Cookies
Ingredients
- 1½ cups blanched almond flour, such as Bob’s Red Mill
- 2 tablespoons tapioca starch or arrowroot starch
- ½ teaspoon baking soda
- 1 egg white
- ¼ cup honey, or 1/8 cup honey and 1/8 cup maple syrup
- 3 tablespoons melted grass-fed butter, ghee, or coconut oil
- ½ teaspoon maple extract
- ½ teaspoon vanilla extract
- 5 strips bacon, cooked, cooled, and diced
- ½ cup dark chocolate chips
Instructions
- Preheat the oven to 325ºF.
- In a bowl, mix the almond flour, tapioca starch, and baking soda.
- In another bowl, beat the egg white and slowly add the honey, melted butter, maple extract, and vanilla extract.
- Add the wet ingredients to the flour mixture and mix well.
- Stir in the chopped bacon and chocolate chips.
- Scoop the batter onto parchment-lined baking sheets using 2 spoons so that the dough will not stick to your fingers.
- Bake for 12-13 minutes depending on the size of the cookies.
- For flatter cookies that stack more easily, open the oven halfway through the baking time and flatten them gently with a spatula, then continue baking.
