Paleo Maple Bacon Chocolate Chip Cookies

Ingredients 

  • cups blanched almond flour, such as Bob’s Red Mill
  • 2 tablespoons tapioca starch or arrowroot starch
  • ½ teaspoon baking soda
  • 1 egg white
  • ¼ cup honey, or 1/8 cup honey and 1/8 cup maple syrup
  • 3 tablespoons melted grass-fed butter, ghee, or coconut oil
  • ½ teaspoon maple extract
  • ½ teaspoon vanilla extract
  • 5 strips bacon, cooked, cooled, and diced
  • ½ cup dark chocolate chips

Instructions 

  • Preheat the oven to 325ºF.
  • In a bowl, mix the almond flour, tapioca starch, and baking soda.
  • In another bowl, beat the egg white and slowly add the honey, melted butter, maple extract, and vanilla extract.
  • Add the wet ingredients to the flour mixture and mix well.
  • Stir in the chopped bacon and chocolate chips.
  • Scoop the batter onto parchment-lined baking sheets using 2 spoons so that the dough will not stick to your fingers.
  • Bake for 12-13 minutes depending on the size of the cookies.
  • For flatter cookies that stack more easily, open the oven halfway through the baking time and flatten them gently with a spatula, then continue baking.
